Mixed vegetable saagu in poori breads and served with a mint and brinjal yoghurt.



Serves 6 to 10, vegan

Vegetsble saagu is a coconut based curry that is usually thickened with a crushed dal. It comes from Karnataka or Mysore as it used to be called in South West India. Don't be put off by the number of ingredients as most of them are just whizzed up in a food processor. One visit to an Indian grocer and you will find all you need. It can be used as a filling or served as a curry with rice in it's own right as a main course.

In the café we served this in a cylinder made with poori bread dough but you could just as well simplify the dish a bit and serve the saagu on a flat poori bread.
