Sweet potato frittata
This recipe can be cooked without the pasta but if you have a small bowl of pasta left in the fridge then this is a great way of using it up. You can use this as a general recipe for frittata and try using different ingredients such as sauteed leeks, marinated vegetables, roasted vegetables and so on.
for the frittata
1 medium sized onion
1 red pepper
1 sweet potato
2 handfuls spaghetti or any leftover pasta
400ml (14floz) milk
Salt and pepper
Handful of fresh basil
All of the cooking preparation for this delicious frittata can be done in one pan. Choose a quality non stick frying pan for this dish. Also it will need to go in the oven so make sure the handle is up to it.
Finely chop the onions and pepper, heat a little olive oil in the frying pan and saute the veg over a medium heat. When they are just about to brown add the finely chopped sweet potato. Lower the heat and slowly saute the contents until the sweet potato is just cooked through. This will take about 10 to 15 minutes.
Place the eggs, milk, nutmeg, basil and pasta in a bowl and mix thoroughly. Season with the salt and pepper. Pour the mixture into the pan and cook for 25 minutes in a medium oven. Serve immediately with garlic mayo and plenty of salad or vegetables.
