Pink grapefruit salad

Pink grapefruit salad The pink grapefruit is slightly sweeter than it's yellow relative and therefore creates a light and refreshing salad. The beansprouts complement the Chinese style dressing and add a mouth watering crunch to the experience.

For the dressing
Juice of 1 orange
Juice of 1 lime
Juice of 1 lemon
A dash of light soy sauce
A dash of sesame oil
1 tablespoon of mild mustard
100ml (½cup) walnut oil (or an oil of your choice)
A dash of sweet chilli sauce

The salad ingreients
Mixed leaves of your choice
1 small cucumber
2 pink grapefruits
1 small red onion
1 small pack of beansprouts

For the dressing place the mustard in a bowl and whisk in all of the ingredients. What you are looking for is a sweet, sour and salty Chinese style dressing so keep adding the soy sauce and sweet chilli sauce until you achieve a nice balance. Don't be shy with the sweet chilli sauce.

Using a very sharp knife cut the top and bottom from the grapefruit. Cut off the skin as well as the pith to reveal the juicy segments below. Cut between the veins that separate the segments and remove the segments. Save the juice and add it to the dressing.

Finely slice the red onion into half moons and then mix all of the salad ingredients in a bowl and dress generously. There will be more than you need so bottle the rest for your refridgerator.
