In the wok stuffed omelette

In the wok stuffed omelette The making of this omelette can be a little tricky to master but I have included it because not only is it the quickest omelette you can make it can be filled with any spicy leftovers you have in your fridge. Try it as a tasty hangover breakfast!

You will need a well used wok. If your wok is new brush the inside surface with oil and heat over a high flame until it is dark all over. Make sure your kitchen is well ventilated first!

for the filling
3 or 4 spoons of leftover curry, chilli, mixed veg, grated cheese, fried mushrooms, left over noodles ...anything you fancy

for each omelette you will need
2 eggs
1 spring (green) onion
salt and pepper to taste
