Serves 4 to 6This is probably one of my favourite recipes. The way the flavours are developed throughout the making of the 'meatballs' creates an amazingly deep flavoured dish that tastes so Italian. If you can't find Halloumi cheese you will need to use a substitute that stays quite firm during cooking. Ricotta would work quite well. If you want to create a vegan version try using a soy cheese.
