Roast butternut squash gnocchi with salsa

Serves 6, vegan

Roast butternut squash dumplings flavoured with sage and lightly baked with tomatoes, basil, olive oil, olives, balsamic vinegar and chilli.

You can use this recipe as a general recipe for gnocchi. Just substitute the butternut squash for a different vegetable puree. This dish is vegan but if you prefer you could grate some parmesan over it or add some chopped mozzarella to the salsa
