Whiskey and chocolate cheesecake with a gluten free shortbread base and Xmas pudding ice cream



Serves 6, gluten free

This recipe was on my 2012 Xmas menu. I never serve Xmas pudding as it is because it is very rich and not very popular especially if it follows two courses. This particular year we bought gluten free puds and made ice cream from them.The cheesecake uses an Irish whiskey cream such as Baileys to create a rich and Christmassy taste so if you have some leftovers to use up in the New year why not try this dessert.
