Raspberry and mascarpone brulee

Gluten free. Serves 6

The custard for this brulee is amazing! I have been using it for so many years now that I can't remember where it came from Ė Iím guessing it came from the Gate in Hammersmith, London. The mascarpone cheese adds so much depth and richness to the dessert. If you can find Madeira it is much better than Sherry. Hereís your chance to use that brulee gun thatís been sitting the cupboard for years!
